What do you call the large wooden "spoon" thingy?

It’s a peel! But I think that many people might colloquially refer to it as a paddle, pizza paddle, or spatula.

That's called a peel. That shape is usually called a pizza peel. Ones with short handles can be called baker's peels, and bread peels or baguette peels are long and narrow.

I've never worked in a pizza place, nor in a bakery, but I knew it was a paddle. Not sure how I knew, but I knew.

"Peel" if it's pizza you are making (because you use it to "peel" the pizza off the floor of the oven). "Paddle" is the generic term and can be used for most circumstances.
