Why did they say "a kindness", "a cruelty", as if they're countable nouns?

They can be countable. The man was done a single act of kindness, or a single act of cruelty.

The passage is correct but I wouldn't suggest using them as countable nouns in general speach/writing. It sounds either archaic or overly poetic.

They are countable, but they are almost exclusively used in the singular.

It's short for "an act of kindness".
